A brief history of fajitas
The history of fajitas is contested, with various stories and legends about their origin. However, it is generally agreed that fajitas have their roots in the Mexican state of Texas. They were originally made with skirt steak, a tough and inexpensive cut of beef that was abundant in the region. Cattle ranchers would often give their workers the less desirable cuts of meat as part of their pay. The workers would then marinate and cook the meat over an open flame, typically on a skillet or a griddle. The meat was sliced thinly and served with tortillas and toppings, and thus the fajita was born.
