The meat was sliced thinly and served with tortillas and toppings, and thus the fajita was born.

Ingredients
  

  • 500 g boneless skinless chicken breasts sliced into thin strips
  • 2 bell peppers sliced into thin strips (any colour you prefer)
  • 1 onion sliced into thin strips
  • 3 cloves garlic minced
  • 1 tsp cumin ground
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper ground
  • 2 tbsp olive oil
  • flour tortillas warmed
  • Optional toppings: grated cheese, sour cream, chopped coriander (cilantro), sliced avocado, salsa, guacamole

Instructions
 

  • In a small bowl, mix together the cumin, chili powder, paprika, salt, and black pepper.
    1 tsp cumin, 1 tsp chili powder, 1 tsp paprika, 1/2 tsp salt, 1/4 tsp black pepper
  • Heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook for 5-6 minutes or until cooked through. Remove the chicken from the skillet and set aside.

  • Add the sliced peppers, onions, and minced garlic to the same skillet. Cook for 5-6 minutes or until the vegetables are tender.

  • Add the cooked chicken back to the skillet with the vegetables. Sprinkle the spice mixture over the chicken and vegetables and stir to combine. Cook for an additional 1-2 minutes or until everything is heated through.
  • Serve the chicken fajita mixture in warm flour tortillas with your favourite toppings.
