This quick and easy, Korean-style beef stir fry is tasty and is perfect for a mid-week meal. It combines soy, mirin, garlic and chilli to make a simple but delicious meal.
Cavolo nero may not typically be associated with Korean cooking, but it works really well in this dish, adding a little bitterness. It also has a great flavour and texture and has just become my favourite brassica!
In fact, I was planing to use spinach originally, but the supermarket had run out when I went there after work. I’ve no idea why there’d been a run on spinach, but it turned out to be a bonus in disguise, as using cavolo nero instead worked brilliantly. The green beans and mange tout are there to add a little crunch to the dish.
