green beans, mange tout and garlic stir fryThis easy green bean, mange tout and garlic stir fry recipe is great as a simple side dish when cooking up a Chinese meal. It only takes a few minutes to whip up and is really tasty.

Of course you don’t have to serve it with Chinese food (although it’s based on a Chinese recipe) – this will work well as a side with any stir fry, noodle or fried-rice based main. I made this to accompany my kimchi pork mince fried rice dish.

Aside from garlic, the flavour in this recipe comes from chicken stock and sugar, so the dish is slightly salty and sweet.

If you wanted to liven things up a bit, you could of course try adding a chopped chilli or two.

Instructions
  1. heat your wok over a high heat and add the groundnut oil
  2. when the oil is nearly smoking, add the garlic and fry for 10 seconds
  3. quickly add the green beans, salt, sugar and chicken stock and simmer for 2 minutes
  4. add the mange tout and simmer for a further 3 minutes, until the beans and mange tout are just turning tender but are still nice and crunchy. Mix in the sesame oil and serve, optionally sprinkled with a few sesame seeds
